TASTE OUR TRADITION
We produce mozzarella from fresh Dutch milk collected directly from the farms around Haarlem or at the biological city market every Friday. We process the milk immediately because milk is a live product and fresher is better! The procedure includes pasteurizing the milk at low temperature (72 °c) for 60 sec to ensure it is free from bacteria.
Did you know that not every cheese is meat free? Our mozzarella is 100% vegetarian since we use only vegetarian rennet to process our milk after it has been pasteurized at low temperature (72 °c)
We process mozzarella using an old technique, using just pans, thermometers, water and our hands. The only two ingredients we add are 1.3 gr/L citric acid and 1ml/L vegetal rennet.
